Well this recipe was adapted from a Sweet Potato Dinner Roll recipe I played around with recently… It’s a great recipe for holiday dinners or just a simple side for some of your favorite fall meals.
Not only are they healthy and gluten free… they taste amazing!!
So my base ingredient, aside from sweet potato of course was this amazing Gluten Free Baking mix. It uses potato starch, cornstarch, brown rice flour tapioca starch, yellow corn flour and soy flour. Its a great all-purpose baking mix for your gluten free recipe alterations.
1 1/2 – 2 C baking mix
1 C milk/ buttermilk
1 C sweet potato
Bake at 400 degrees bake for 15 minutes or until golden brown on the tops of the muffin.
let cool on wire rack and then enjoy!!
